Manufacturing process :
Harvested by hand. 100% Sorting and destemming Fermentation under regulated temperature for a long fermenting in vats. Aged 7 months in vats.
Tasting notes : Purple colour. At first you get a fresh nose of small red fruits and then you discover ripe fruits and spicy notes. These notes will appear in mouth: pepper, leather and fennel. Young and very promising wine!
Cellaring: 4 to 10 years.
Cooking ideas: Red meats, especially lamb cooked with prunes, duck with onions sauce. Cheese
